Campworthy: Queso Fundido

What do you love about this recipe? One of my favorite things about camping is sharing food, and I love making snacks to pass around! Whether you're playing cards or chilling around the fire—or not camping at all—queso makes any night better. This is a meat-free version of the recipe, but adding hot sausage and spices enhances and adds even more flavor—it's a forgiving recipe and can be modified however you want. I guarantee you'll make new friends in camp if you try this recipe.


Queso Fundido

Ingredients

  • 2 tablespoons olive oil or butter
  • 1/2 cup mushrooms chopped
  • 1 large yellow onion
  • 4 garlic cloves
  • Chili powder and cumin to taste (can also be replaced with taco seasoning packet)
  • 3 diced bell peppers (any color!)
  • 1 pound shredded cheese (monterey jack and cheddar are great together, but one or the other will also work)
  • 3 diced tomatoes
  • 1 bunch cilantro (chopped)
  • Tortilla chips or tortillas for dipping

Instructions

Step 1

In a cast iron skillet over a fire or on a camp stove (medium to high heat), add the olive oil, garlic, and onion. Cook for 3-4 minutes until onions start to become translucent. Then add in the mushrooms and bell peppers and cook for another 5 minutes.

Step 2

Remove the mix from the heat and take out 50% from the pan and set aside.

Step 3

Put back on the heat source and start to layer cheese and the mushroom/veggie mix, continue to layer until you use all the cheese!

Step 4

Cover it and heat over low coals or heat until the cheese is melted and golden brown. This usually takes about 4-5 minutes.

Step 5

Top with more fresh ingredients like tomatoes, cilantro, green onion, olives, salsa, sour cream, jalapenos, avocados—all work great and allow you to add your own flavor! Make sure to have chips or tortillas ready to start scooping and eat immediately after removing from the heat source.
