Fire-Grilled Salmon

Ingredients

  • 1 fillet salmon with skin on (full fish)
  • 3 tablespoons rosemary
  • 3 tablespoons sage
  • 1 tablespoon thyme
  • 1 tablespoon garlic powder
  • 2 tablespoons salt
  • 1 tablespoon pepper
  • 1/4 cup butter or olive oil
  • 1 lemon
  • Foil or broiler basket

Directions

Step 1

Place all ingredients except salmon butter and lemon in a small bowl and mix.

Step 2

Place the fillet of salmon on top of foil and leave enough to completely cover the fish if using foil. Drizzle olive oil or place cubes of butter all over the inside of the salmon fillet then sprinkle on the herb/salt/pepper mix on the inside of the fillet. Cut lemon into thin slices and place on top of the herbs.

Step 3

Wrap the salmon fully in foil and place over coals, or use a camping broiler basket and skip the foil. Check cooking progress occasionally. It's done when the meat is firm and the fish is no longer shiny on the inside.
